The endosperm of the shells of raw cashews contains a toxic resin that irritates the skin. The nuts are roasted or steamed to eliminate this poisonous substance to prepare them to be eaten. The heat treatment is followed by cracking open of the shell in order to get the edible kernel. This is a necessary step of processing cashews prior to their market delivery all over the globe.
